Sesame Ginger Dressing

Ingredients 

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, chopped
  • 2 tablespoons honey
  • 2 tablespoons minced ginger
  • 1 tablespoon toasted sesame oil

Directions

  1. Mix all ingredients together, and shake well before using on salad

 

Tofu Croutons

Ingredients:

  • Extra-firm tofu, chopped into cubes
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Directions:

  1. Pre-heat oven 375°F
  2. Mix ingredients together, and spread on a baking tray
  3. Bake for 20-45 minutes

 

 

Putting it all together:

  • Bok Choy, chopped
  • Add tofu croutons
  • Add salad dressing
  • Sprinkle sesame seeds on top!
