Sesame Ginger Dressing
Ingredients
- 1/2 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons low-sodium soy sauce
- 2 cloves garlic, chopped
- 2 tablespoons honey
- 2 tablespoons minced ginger
- 1 tablespoon toasted sesame oil
Directions
- Mix all ingredients together, and shake well before using on salad
Tofu Croutons
Ingredients:
- Extra-firm tofu, chopped into cubes
- 1 tablespoon olive oil
- ½ teaspoon salt
Directions:
- Pre-heat oven 375°F
- Mix ingredients together, and spread on a baking tray
- Bake for 20-45 minutes
Putting it all together:
- Bok Choy, chopped
- Add tofu croutons
- Add salad dressing
- Sprinkle sesame seeds on top!
