Ingredients
4 chicken breasts, butterflied
1 small circle of brie cheese, sliced
2 apples, sliced (honey crisp is best!)
2 red onions, sliced
¼ cup extra virgin olive oil
3 tbsp maple syrup
1 tbsp dijon mustard
1 tsp garlic powder
1 tsp dried oregano or thyme
½ tsp salt
¼ tsp black pepper
Directions
In a cast iron pan place red onion. Set aside.
Place apple slices and brie inside chicken. Fold chicken over top. Place on top of onion.
In a separate bowl stir together marinade ingredients. Drizzle over top of chicken, reserving 1 tbsp.
Bake at 400F for 20-22 minutes or until cooked through. Drizzle over remaining marinade and enjoy!
