A Mediterranean recipe that keeps our insides nice and healthy! 1 avocado is full of healthy fats (unsaturated, known to be heart healthy), and contains 11g fibre and 3g protein. Instead of wasting your entire bag of avocados, try this recipe instead!
Ingredients
1 red onion, thinly sliced
½ tbsp oil
3 avocados, halved
6 eggs
¼ cup sharp cheddar cheese, grated
½ tsp Everything Spice
Directions
Layer red onion in a baking dish and drizzle with oil.
Place avocado halves on top and crack 1 egg into each.
Top with cheddar cheese and sprinkle everything spice on top.
Bake at 350F for 12 minutes for runny yolks. Enjoy!
