Ingredients List:
Cauliflower pizza crust:
1 bag cauliflower rice, frozen & thawed
¾ cup of Mozzarella cheese
¼ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp dried oregano
1 ½ tbsp coconut flour
¼ tsp salt and freshly pepper
1 egg
Green pizza sauce:
3 cups fresh spinach, chopped
5 garlic cloves, minced
¼ cup of fresh basil, chopped
½ cup ricotta cheese
¼ cup grated parmesan cheese
½ tsp of salt
Toppings:
1 mozzarella cheese, sliced thinly
¼ cup basil, chopped
2 roma tomatoes or cherry tomatoes, thinly sliced
Instructions:
Preheat oven to 425 F
In a large bowl, add cauliflower rice, mozzarella cheese, parmesan cheese, garlic powder, oregano, coconut flour, salt, pepper and egg.
Mix evenly and until combined smoothly.
Use a hand blender to pack the mixture and make it into a dough-like consistency.
On a baking sheet, transfer the cauliflower mixture and begin to pack and press into a thin crust shape.
Put in the oven for 20-30 minutes, until lightly browned.
Green pizza sauce: in a frying pan add chopped spinach and garlic cloves and cook over medium heat for 4-5 minutes. In a bowl add basil, ricotta cheese and parmesan cheese and mix evenly. Add cooked spinach and garlic into the mixture and mix until evenly distributed.
On the cooked cauliflower crust, spread the green sauce evenly on top. Add tomatoes and mozzarella cheese slices. Finish it off with the remaining amount of Basil.
Place in the oven for 10 minutes, until the cheese is melted.
