Ingredients
4 eggs
½ cup milk, any type
½ cup almond flour
2 tbsp coconut flour
¼ cup maple syrup
1 tsp vanilla
Zest from 1 lemon
1 cup blueberries
1 tbsp coconut oil
Directions
In a large bowl, combine all ingredients (excluding blueberries and coconut oil).
Melt coconut oil and use it to coat a cast-iron skillet.
Add fresh blueberries to the skillet, followed by the cake batter.
Bake for 15 minutes at 450F and enjoy!
