Ingredients
6 cups broccoli florets
1 can coconut milk
1 sautéed onion (with 2 tbsp oil)
3/4 cup cheddar cheese
2 cups water + 1 tbsp salt (instead of vegetable broth)
Directions
Sauteed onion with 2 tablespoons of oil and add to a pot with broccoli florists, coconut milk and water
Cook on medium-high heat for 7 minutes. After, use an immersion blender to blend everything together
While the pot is still hot, add in cubed cheddar cheese and mix until melted and smooth
