These noodles are not only high fibre and low carb, but they count towards a veggie serving (or more)! You are going to have to trust me on this one, give this recipe a try. The perfect noodle swap, or simply a veggie side dish
Ingredients
1 cabbage, thinly sliced
1-2 tbsp black pepper
2 tbsp EVOO
1 tsp salt
Juice from 1 lemon
¾ cup parmesan cheese
Directions
Toast 1 tbsp black pepper on medium heat for 1 minute.
Add olive oil to pan. Once heated add cabbage, lemon juice, remaining pepper.
Cook for 5-7 minutes tossing with 1/2 cup parmesan cheese. Serve with remaining parmesan on top. Enjoy!
