Cheesy Berry Blintze Muffins

Ingredients

Batter Ingredients:

  • 1 cup (226g), shredded cheese (Monterey Jack)

  • 1 cup (226g), ricotta cheese

  • 3 tbsp, plain Greek yogurt

  • 1/2 cup almond flour

  • 1 tsp baking powder

  • 1 tsp vanilla

  • ¼ cup unsweetened applesauce

  • 3 large eggs

  • 2 tbsp maple syrup


Topping Ingredients:

  • 1-2 cups berries, chopped

  • 1 tbsp cinnamon + 2 tbsp maple syrup

Directions
  1. Combine all batter ingredients and add to a lined muffin tray.

  2. Top with topping ingredients and bake at 350F for 25 minutes.
