Prep time: 20 minutes - Cook time: 20-25 minutes - Total time: 40-45 minutes
Ingredients
Chopped vegetables (mushrooms, bell peppers, red onion, carrots, garlic cloves, broccoli and tomatoes)
¼ cup EVOO
3-4 tbsp Healthy U Italian spice mix (or any other premix version)
1 rotisserie chicken, shredded
¾ cup fresh basil leaves
1 cup grated cheese, anything goes!
Directions
Layer all ingredients in a lined baking dish and bake at 400F (on the lower rack to prevent cheese from burning) for 20 to 25 minutes.
