Healthy U, Breakfast Batching Cooking! Here is our recipe to make traditional waffles & sausages with a healthy twist!
Ingredients List:
Cheesy waffles:
6 eggs
3 cups cheddar cheese, shredded
6 tbsp almond flour
6 cups fresh spinach (you can also use roasted red peppers, tomatoes and kale!)
Sausages:
1 lb ground chicken
1 tbsp maple syrup
1 tbsp Healthy U Secret Salad Mix
Alternative to Healthy U Secret Salad Mix
1 tsp sesame seeds
1 tsp paprika
1⁄2 tsp salt & black pepper
1⁄2 tsp poppy seed
1⁄2 tsp celery seed
1⁄4 tsp garlic powder
1⁄2 tsp cayenne pepper
1 tsp hemp seeds
Instructions:
Cheesy waffles:
Sautee spinach in a little bit of cooking oil to reduce volume to about 1 cup.
Chop up the sautéed spinach finally into a pureed consistency.
Add spinach, whisked eggs, almond flour and cheese into a large bowl. Combine.
Set up your waffle maker, and pour in batter according to the instructions. If you do not have a waffle maker you can also use a large pan and make pancakes!!
You can use a spatula to make sure the batter is evenly distributed in the waffle maker.
The waffle should be ready in 2-3 minutes.
Serve warm!
Sausages:
Combine sausage ingredients in a large bowl.
Scoop out 2 tbsp of sausage mix and use your hands to roll it into a ball. Then flatten it down to resemble a patty shape. Set aside on a parchment lined baking sheet.
Continue step 2 with the rest of the sausage mix.
In a large frying pan, heat up cooking oil at medium heat. Add sausage patties (you can cook these in multiple rounds to avoid overcrowding the pan).
Cook sausages for 5-6 minutes on each side.
Serve with waffles and enjoy!
Tips:
Maple syrup is what makes these sausages so special!
You can freeze the waffles and sausages and separate them with parchment paper to use for early morning rushes.
