Ingredients List:
Broccoli Salad:
4 cups broccoli florets, chopped (You can use the entire broccoli bundle!)
1 apple, chopped (or grapes)
1/2 cup slivered almonds, toasted at 350 F for ~6-8 min (or sunflower seeds)
1/2 cup red onion finely chopped
1/2 cup sharp cheddar cheese, grated
Chicken Salad:
1-2 tbsp Healthy U Basil Lemon Twist
Alternative to Healthy U Basil Lemon Twist
2 tbsp lemon pepper
2 tsp dried basil
2 tsp dried oregano
1 tsp dried thyme leaves
¼ tsp salt
2-3 chicken breast
Dressing:
1/2 cup oil
2 tbsp apple cider vinegar
2 tbsp Dijon mustard
2 tbsp honey
2 garlic cloves, minced
1/2 - 1 tsp salt
Instructions:
Salad:
Pre-heat oven to 350 F.
Combine broccoli, apples, almonds, cheese and onions in a large bowl.
Place chicken breast in the parchment-lined baking tray and drizzle 1/2 tbsp of oil on the chicken. Season with Basil Lemon Twist spice.
Roast in the oven for 15 min at 350 F.
Let the chicken cool.
Once the chicken is cool, slice the chicken breast and place it back on the baking tray.
Put it back in the oven until it has a crispy exterior.
Let it cool.
Dressing:
Combine the oil, apple cider vinegar, Dijon mustard, honey, garlic and salt in a small bowl.
Serve:
Scoop out 2 cups of salad into your serving bowl or container.
Add chicken on top and drizzle with salad dressing.

1 cup of broccoli is 2.5 g of fibre.
You can use containers to store your food in preparation for future meals the next day or later in the week.
