Chicken Gyros on a Homemade Spit šŸ— šŸ˜‹

These homemade chicken gyros are bursting with flavour and make for a delicious, satisfying meal!


Prep time: 30 minutes Total time: 1 Hour and 15 minutes Serves: 2 servings

Ingredients

Chicken Gyros:

  • 8-10 chicken thighs

  • Ā½ cup Greek yogurt

  • Ā¼ cup olive oil

  • 1 lemon, zest and juice

  • 4 garlic cloves, minced

  • 2 tsp salt

  • 1 tsp paprika, cumin, oregano, coriander, pepper

Homemade Spit:

  • 1 large onion

  • 2 wooden skewers, soaked in water to prevent burning


Directions
  1. In a bowl, combine Ā½ cup Greek yogurt, Ā¼ cup olive oil, zest and juice of 1 lemon, 4 minced garlic cloves, 2 teaspoons salt, 1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon oregano, 1 teaspoon coriander, and 1 teaspoon pepper.

  2. Coat 8-10 chicken thighs in the marinade, making sure they are fully covered. Let it marinate for at least 30 minutes or overnight for more flavour.

  3. Slice 1 large onion into rings.

  4. Soak 2 wooden skewers in water to prevent burning during cooking.

  5. Preheat your oven to 350F.

  6. Skewer the marinated chicken thighs on top of the onion slice onto the soaked wooden skewers.

  7. Place the skewer with chicken and onion on a baking sheet and bake for 45-50 minutes, or until the internal temperature of the chicken reaches 165F.

  8. Once the chicken is rested, slice it off the spit.
