Ingredients:
1 zucchini
1 lb ground chicken
1 tbsp oil
Teriyaki sauce
½ cup soy sauce
⅓ cup water
3 tbsp maple syrup
2 tbsp rice vinegar
1 clove garlic, minced
1 tsp ginger, ground
1 tbsp cornstarch + 2 tbsp warm water
Instructions:
Preheat oven to 450ºF and line a baking sheet with parchment paper
Cut zucchini into an accordion – slice cross-wise (like an accordion) ⅔ of the way down then, turn zucchini over and cut at an angle ⅔ of the way down. Place skewer into zucchini and bake for 10 minutes
In a medium bowl, mix together ingredients for teriyaki sauce
Heat oil in a large nonstick skillet over medium heat and begin cooking ground chicken until no longer pink then add teriyaki sauce. Simmer for 6-8 minutes.
Top zucchini with chicken teriyaki & enjoy
