Ingredients
Salad Base:
1 head of cauliflower, finely chopped
1-2 bell peppers, chopped
1 zucchini, chopped
½ red onion, diced
1 can chickpeas, rinsed and drained
½ cup hemp seeds
¼ cup cashews, roasted
Dressing:
6 tbsp EVOO
3 tbsp vinegar (any type)
3 tbsp honey
2 tbsp dijon mustard
2-3 garlic cloves, minced
½ tsp salt
Juice from 1 lemon
Directions
Combine all ingredients in a large bowl and enjoy! (Salad lasts for days in the fridge)
