Smashed Broccoli

Prep Time: 20 min - Cook time: 15 min - Total time: 35 min




Ingredients:

1 head broccoli, cut into florets & steamed for 5 minutes

2 tbsp oil 3 garlic cloves, sliced or minced

1/4 cup freshly grated parmesan cheese

1/2 cup sun-dried tomatoes, in oil

2 tbsp pine nuts, raw

1 tbsp fresh basil, chopped (TOPPING)

Salt & pepper for flavour




Instructions:
  1. Steam broccoli and transfer onto a baking sheet. Drizzle olive oil over, along with the remaining ingredients. Leave the basil until the end

  2. Bake at 425 F for 18-20 minutes or until crispy

  3. Add basil ontop
