Ingredients
2 lbs asparagus, tough ends trimmed
2 tbsp oil
4 garlic cloves, minced
1 yellow onion, chopped
1 tsp sea salt or more to taste
1/4 tsp ground black pepper
900ml vegetable broth
1 cup milk
1 cup shredded mozzarella cheese OR juice of 1/2 lemon
Optional: shredded rotisserie chicken
Directions
Heat a pan over med-high heat and add oil and garlic.
Chop asparagus and onion, and add to the pot.
Cook veggies until soft and add salt, pepper, broth, and milk.
Use a hand blender to blend the mixture until smooth.
Add shredded chicken and cheese.
