Prep time: 5 minutes - Cook time: 15 minutes - Total time: 20 minutes
Ingredients
3-4 chicken breast, sliced
3 tbsp extra virgin olive oil
Mixture: 1 tsp salt, 1 tsp black pepper, 2 tsp oregano
2-3 garlic cloves, minced
1 ½ cup cherry tomatoes, halved
3 cups baby spinach
¼ cup vegan heavy ‘cream’
½ cup parmesan cheese
Lemon wedges for finish
Directions
In a pan heat 2 tbsp. olive oil and saute chicken with spices for 5mins on each side. Set aside on a separate plate.
In same pan add 1 tbsp olive oil, garlic, cherry tomatoes and spinach. Cook through. Add cream and parmesan cheese.
Place chicken back in pan and top with more parmesan cheese and lemons! Enjoy!
