Ingredients
Meat sauce:
1lbs @trulocal lean ground beef
1 garlic clove, minced
1/4 tsp salt & pepper
2 cups marinara (or 2 cups pureed tomato + 1 tbsp Healthy U Italian Spice)
Alternative to Healthy U Italian Spice:
2 tbsp dried basil
2 tbsp dried oregano
1 tbsp dried rosemary
2 tbsp dried parsley
1 tbsp dried thyme
1 tbsp red chili flakes
1 tsp garlic powder
1 tsp salt & black pepper
Ricotta mixture:
1 pkg ricotta mixture
1/2 cup parmesan cheese, grated
1 egg
1 tbsp Healthy U Italian Spice
1/4 cup fresh basil, chopped
2 cups of light mozzarella cheese, shredded
Instructions
Prepare the eggplant first by slicing (with skin) and roast at 400F for 15 minutes, until soft. Sprinkle with olive oil & salt
Prepare your meat sauce, by adding all the above ingredients into a pot over medium-high heat for 8-10 minutes.
In a bowl, mix together all the ricotta ingredients and mix until smooth
Begin layer: 2 scoops of ricotta mix at the bottom of a oven safe dish, layer with eggplant slices and lastly add the meat sauce. Continue layering until all the ingredients are used up
Lastly, sprinkle with mozzarella cheese.
Bake at 400 F for 25-35 minutes
