Ingredients
1 eggplant, sliced and baked at 350F x 1-15 minutes
Ricotta mixture:
1/2 cup ricotta cheese
1/2 cup parmesan cheese, grated
1 egg
1/2 tsp salt
1 tbsp Healthy U Italian Spice
Alternative to Healthy U Italian Spice
2 tbsp dried basil
2 tbsp dried oregano
1 tbsp dried rosemary
2 tbsp dried parsley
1 tbsp dried thyme
1 tbsp red chili flakes
1 tsp garlic powder
1 tsp salt & black pepper
2 cups homemade / ready-to-go marinara sauce
¼ cup of basil
Instructions
Slice up cooked eggplant into thin slices and add a spoonful of ricotta mixture into the center and spread.
Add marinara sauce, salt, basil, and Italian Spice. Roll them up and add extra marinara sauce with Italian Spice on top
Transfer onto a baking dish and bake at 350F for 15 minutes. Optional: add cheese on top.
