Ingredients:
1 cup of chicken breast, lean, skinned, cubed
1 cup zucchini, sticks
1 cup low fat cheddar cheese
1 cup bell pepper, sticks
1 cup red onions, sliced
2 tbsp extra virgin olive oil
Healthy U Mexican Spice
Alternative to Healthy U Mexican Spice
1 tsp garlic powder
1⁄2 tsp crushed red pepper flakes
1⁄2 tsp dried oregano
2 tsp paprika
1 tsp ground cumin
1⁄2 tsp salt & black pepper
1⁄2 ground cinnamon
1⁄2 ground cloves
Cold Topping:
1 cup avocado
2 tbsp of green onions, chopped
2 tbsp cilantro, chopped
Romaine lettuce for wrapping
Oikos 0% Greek yogurt
Lime juice
Instructions:
On a baking sheet add chicken and vegetables (mixed or separated depending on preference).
Sprinkle with Healthy U Mexican Spice, oil and cheese.
Bake at 425 F for 13-15 minutes.
Top fajita with cold toppings.
You can mix everything together or everyone can help themselves from the baking sheet!
