Ingredients
¼ cup feta cheese, crumbled (my fave is goat / sheep for a creamier finish)
1 egg
1 tortillas, toasted (I used @sonoratortillas - keto version)
Optional: Salt & pepper to taste
Directions
Crumble feta into the shape of a circle on a frying pan.
Crack an egg in the middle of the feta and cover frying pan with a lid for 1-2 minutes.
Open lid, flip egg-feta mixture and fry for 30 seconds.
Add to a toasted tortilla and enjoy!
