Ingredients
3-4 chicken breasts, cubed
2 bell peppers, diced
2 zucchini, diced
1 red onion, cut into wedge chunks
8 garlic cloves
1 pkg @greengiant Cauliflower Veggie Tots (you can skip altogether, or use potato wedges instead)
Bake 400F x 35 minutes
Toppings:
½ cup black pitted olives
½ cup feta cheese
2 tbsp freshly squeezed lemon juice
Marinade:
3 tbsp freshly squeezed lemon juice
2-3 tbsp extra virgin olive oil (EVOO)
3 garlic cloves, minced
2 tsp paprika
1 tsp oregano
½ tsp salt
¼ tsp black pepper
Directions
Place cubed chicken breast, diced bell peppers, zucchini, red onion, garlic cloves and @greengiant Cauliflower Veggie Tots or potato wedges on a lined baking tray
Combine lemon juice, extra virgin olive oil, garlic cloves and spices to create the marinade. Pour over chicken and veggies before baking at 400F for 35 minutes
After baking top up with black pitted olives, feta cheese and freshly squeezed lemon juice. Enjoy!
