Ingredients List:
4 tbsp oil
1 onion, finely chopped
4 garlic cloves, chopped
1 (28-oz) can diced tomatoes
1 1/2 tbsp Healthy U Greek Spice
1/2 tsp salt
1/4 tsp pepper,
1 tsp cumin,
3/4 tsp oregano
1 tbsp honey
25-30 shrimp, cooked
1/2 cup feta cheese, crumbled
2 tbsp fresh mint, chopped
Instructions:
Over medium heat, add oil, onions, garlic and half the amount of Healthy U Greek spice to a large skillet. Saute for 3-4 minutes, until onions soften.
Add diced tomatoes, the remaining Healthy U Greek spice, and honey. Cook for an additional 5 minutes.
Add shrimp and feta cheese on top of the tomato mixture.
Bake in the oven at 350F for 15 minutes
Top with fresh mint
