Ingredients & Instructions:
1 red onion, sliced
1 lemon, sliced
1 package extra firm tofu, cubed
1 tbsp Healthy U Greek Spice
Alternative to Healthy U Greek Spice
3 tsp dried oregano
2 tsp dried basil
1 tsp dried dill
2 tsp onion powder
2 tsp garlic powder
1 tsp mint
1 tsp ground cinnamon
½ tsp salt & black pepper
1. Preheat oven to 425ºF and line baking sheet with parchment paper
2. Evenly spread onions, lemon slices and tofu on baking sheet, season with spice
3. Bake for 20-25 minutes
Salad
1-2 cups cherry tomatoes, halved
1-2 cups celery or cucumber, chopped
½ cup Kalamata olives
1. Combine all ingredients in a large bowl
Salad Dressing
1 cup crumbled feta cheese
¼ cup oil
Juice of 1 lemon
2 cloves garlic, minced
½ tsp salt
¼ tsp pepper
1. In a small bowl, combine all ingredients
2. Drizzle dressing over salad
3. Add salad over baked tofu and onions
