Homemade Mayo

In just 5 ingredients, you can make a healthier 'mayo' with 80% less fat, half the ingredients, a lower cost, and a much more natural profile than standard versions.


Prep time: 5 minutes Total time: 5 minutes

Serves: Makes ~½ cup (8 servings, 2g fat per serving)

Ingredients
  • 4 eggs, hard-boiled

  • 3 tbsp spicy brown mustard

  • 1 tsp ACV

  • ¼ tsp salt

  • ¼ - ½ cup water



Directions
  1. Peel and chop 4 hard-boiled eggs.

  2. Measure 3 tablespoons of spicy brown mustard, 1 teaspoon of apple cider vinegar (ACV), and ¼ teaspoon of salt.

  3. In a blender or food processor, combine the eggs, mustard, ACV, and salt.

  4. Add ¼ to ½ cup of water, depending on your desired mayo consistency.

  5. Blend until smooth and creamy.

  6. Transfer the mayo to an airtight container and store it in the fridge for up to 5 days.
