Ingredients
Crust
1/4 cup honey
1/3 cup coconut oil
1 egg
1 tsp vanilla extract
2/3 cup coconut flour
1/4 cup tapioca flour
1/8 tsp sea salt
Zest of 1 lemon
Filling
1/2 cup freshly squeezed lemon juice
Zest of 1 lemon
1/3 cup honey
3 large eggs + 1 yolk
1 tbsp tapioca flour
1/2 tsp coconut flour
Instructions
Crust
Add flour, honey, egg, extract, and lemon zest to a bowl. Mix until combined.
Cut out a circle of parchment paper fitted for a circular pan. Add the crust mixture to the pan, and use your hands to spread it evenly.
Filling
Add juice, honey, eggs, and flour to a bowl. Mix and then add the lemon zest. Mix once more until completely combined and pour on top of the crust.
Bake 325 F for 10-12 min.
