Ingredients
1 cup green lentils, cooked
1 cucumber, seeds removed (helps salad last longer in the fridge)
1 peach, cubed
1 small red onion, diced
3 tbsp dill, finely chopped
1 cup green beans (fresh or frozen)
1 package feta cheese, cubed
Dressing:
1 tsp salt
1 tsp pepper
Juice from 1 lemon
3-4 tbsp EVOO
1 tbsp honey
