Ingredients
Meatballs:
1 lb ground chicken
1 tbsp coconut oil
1 egg
2 tbsp coconut flour
¼ cup very finely diced onion
1 tbsp soy sauce
1 tbsp maple syrup
1 tsp cumin, garlic powder, paprika, salt & pepper
Optional: 1/4 cup cilantro, chopped + 1 jalapeño pepper, diced + 1/2 tsp cayenne pepper
Coconut Cauli-Rice:
1 pkg frozen president choice cauliflower rice
1 1/2 cups silk coconut milk
1/2 tsp salt
1 red bell pepper, julienned
1/2 cup shredded kale
Optional: 1 cup frozen pineapple chunks
Instructions
Meatballs:
In a bowl add ground chicken with all ingredients. Mix the batter until fully combined and roll into balls
Add oil into a frying pan. Fry for 3-5 minutes and flip. Remove from heat once crispy and fully cooked.
Coconut Cauli-Rice:
Once meatballs are cooked, add cauliflower rice into the same frying pan, along with coconut milk, peppers, and kale.
Add the chicken meatballs on top and combined.
