Pearl, Barley, Chicken Skillet

Prep time: 25 minutes - Cook time: 50 minutes - Total time: 1 hour, 15 minutes


Ingredients

Chicken Marinade:

  • 3 tbsp olive oil

  • 1 red onion, diced

  • 3 tbsp dijon mustard

  • 4 cloves garlic, minced / thinly sliced

  • ¼ cup (or less) fresh rosemary, chopped

  • 1 1/2 tsp smoked paprika

  • 1/2 tsp salt and black pepper

  • 4-6 chicken breasts or thighs


Barley Mixture:

  • 2 tbsp olive oil

  • 1 lemon, sliced

  • 1 1/2 cups barley

  • 3 cups low sodium chicken broth (add 3-5 more cups as you go)

  • 4 cups green swiss chard, chopped

Toppings:

  • ¼ cup fresh dill

  • Creamy garlic sauce (Blend ½ cup feta cheese, ¼ cup plain Greek yogurt, 1 garlic clove, and juice from ½ lemon)

Directions
  1. Mix all marinade ingredients and marinade chicken for 10-20mins. Bake at 375F for 30-35 minutes.

  2. Place oil and lemon slices in a skillet on medium-high heat. Let lemon wedges brown and them remove from the pan.

  3. Add all other ingredients for the barley mixture to the skillet and cook until well combined.

  4. Add baked chicken to the skillet and top with fresh dill and creamy garlic sauce.
