Ingredients List:
Breakfast sheet pan:
6 eggs
1-2 butternut squash, cubed
1 red onion, cubed
2 red bell peppers, cubed
2-3 zucchinis, cubed
2 garlic cloves, minced
1/4 cup olive oil
1 tbsp Healthy U Mexico Spice
Alternative to Healthy U Mexico Spice
1 tsp garlic powder
1⁄2 tsp crushed red pepper flakes
1⁄2 tsp dried oregano
2 tsp paprika
1 tsp ground cumin
1⁄2 tsp salt & black pepper
1⁄2 ground cinnamon
1⁄2 ground cloves
Toppings: shredded cheese + green onions
Pina Colada:
1-2 Pineapples, fresh
3 Bananas, frozen, cut into slices or sections
1 pkg Soft Tofu
2-3 cups Coconut milk (Silk)
Instructions:
Breakfast sheet pan:
Pre-heat oven to 400 F.
On a parchment-lined baking sheet, spread out the veggies and garlic cloves so they are evenly distributed on the sheet.
Pour in the olive oil.
Add Mexican spice and give it a good mix.
Bake for 20-25 minutes until lightly brown on top.
Green onions, shredded cheese and eggs
Pina Colada:
Combine all ingredients and blend!
