Pistachio Gelato

Prep time: 5 minutes - Freezing time: 8 hours Total time: 8 hours 5 minutes


Ingredients
  • 1 1/2 cups Greek yogurt (I used plain yogurt, but you can also use vanilla for extra sweetness)

  • 3/4 cup pistachios, roasted and unsalted / lightly salted

  • 1-2 tbsp honey

  • Juice from 1/2 lime


Directions
  1. Combine all ingredients (3/4 of pistachios) in a high speed blender until thouroughly mixed.

  2. Pour into a freezer safe tray and place in freezer for minimum 8 hours.

  3. Once ready to serve thaw for 5-10 minutes prior to scooping. Enjoy!
