Protein Popcorn

Prep time: 15 minutes - Cook time: 45-50 minutes - Total time: 60-70 minutes

Ingredients
  • 2 cans cannellini (white kidney beans), rinsed and drained

  • 2-3 tbsp EVOO

  • 1 tsp salt & pepper to taste

  • Toppings: rosemary (finely chopped) & Tajin Spice

Dipping Sauce:

  • ¼ cup tahini

  • 3 tbsp ACV

  • ¼ tsp Tajin Spice


Directions
  1. Combine beans, EVOO, salt, pepper, and toppings in a bowl. Add to a lined baking sheet and bake at 425F for 35-45 minutes.

  2. Combine dipping sauce ingredients and pair with your “popcorn”.
