Shaken Cucumber Salad🥒

Sometimes you just need to eat an entire cucumber!!


Prep time: 25 minutes Total time: 30 minutes

Serves: 2 portions

Ingredient
  • 1 Cucumber, thinly sliced 

  • 1 tbsp Sesame oil

  • 1 Garlic clove, grated 

  • 1 tbsp Chili oil 

  • 1 tbsp Sesame seeds

  • 2 tbsp Soy sauce

  • 2 tbsp Rice vinegar

Directions
  1. Place the cucumbers in a colander and sprinkle the salt over them. 

  2. Toss to coat the cucumber slices in salt. Let sit 10 minutes.

  3. Use a paper towel to blot the cucumber slices dry.

  4. Combine sesame oil, chili oil, soy sauce, and rice vinegar into a bowl and mix together.

  5. In a separate bowl, add cucumbers and garlic. Drizzle the marinade over and toss till evenly coated.

  6. Refrigerate for at least 20 minutes before consuming.

  7. Sprinkle with sesame seeds then serve.
