Sometimes you just need to eat an entire cucumber!!
Prep time: 25 minutes Total time: 30 minutes
Serves: 2 portions
Ingredient
1 Cucumber, thinly sliced
1 tbsp Sesame oil
1 Garlic clove, grated
1 tbsp Chili oil
1 tbsp Sesame seeds
2 tbsp Soy sauce
2 tbsp Rice vinegar
Directions
Place the cucumbers in a colander and sprinkle the salt over them.
Toss to coat the cucumber slices in salt. Let sit 10 minutes.
Use a paper towel to blot the cucumber slices dry.
Combine sesame oil, chili oil, soy sauce, and rice vinegar into a bowl and mix together.
In a separate bowl, add cucumbers and garlic. Drizzle the marinade over and toss till evenly coated.
Refrigerate for at least 20 minutes before consuming.
Sprinkle with sesame seeds then serve.
