A veggie and protein boost all-in-one! This loaded eggplant dish is sure to please the family!
Ingredients
3-4 eggplants
500 grams extra lean ground beef
2-3 cups marinara sauce (the higher quality, the better)
1 cup mozzarella, grated (fresh is best)
1 cup parmesan cheese, grated (fresh is best)
1 red onion, diced
Directions
Cut eggplants in half. Scoop out inner portion and dice (reserving for later use). Bake on a parchment lined tray at 350F for 10-15mins.
Meanwhile add ground beef, reserved eggplant, and onion to frying pan. Cook through and then add 1 1/2 cups marinara and 1/2 of mozzarella cheese.
Pour 1/2 cup marinara in bottom of baking dish. Place cooked eggplants on top and fill with meat mixture.
Top with remaining marinara and cheese.
Bake at 400F for 30-35 minutes! Enjoy!
