Ingredients
3-4 chicken breasts, diced
5 tbsp tapioca / arrowroot flour
2 tsp garlic powder
1 tsp salt
1 tbsp olive oil
1 onion, thinly sliced
1 bell pepper, thinly sliced
1 cup broccoli, small florets
Starch mixture (1-2 tbsp tapioca / arrowroot flour + 3-4 tbsp water)
(2) Homemade Sweet & Sour Sauce:
3 tbsp tomato paste and/or ketchup
3-4 tbsp freshly squeezed orange juice
2 tbsp light soya sauce
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp white vinegar
(3) Cauliflower Fried Rice:
1 tbsp sesame oil
1 package cauliflower rice, frozen
1 cup carrots, diced (+/- green peas)
¼ cup green onion, diced
1-2 eggs, whisked
Sprinkle sesame seeds
Directions
Coat diced chicken breast with tapioca / arrowroot flour, garlic powder and salt. Add to a frying pan with 1 tablespoon of oil until crispy.
Once the chicken is cooked, remove the chicken and into the same frying pan cook veggies and starch mixture. While veggies are cooking, create the homemade Sweet and Sour sauce. Add back chicken once the veggies are cooked and add the homemade Sweet and Sour sauce.
In a separate pan, create your cauliflower fried rice by first sauteeing cauliflower rice, carrots, peas and green onions with 1 tablespoon of sesame oil. Push rice to the side and in the same pan add 1-2 whisked eggs and combine with the rice until fully cooked.
Plate sweet and sour chicken with cauliflower fried rice with a sprinkle of sesame seeds, and enjoy!
