Ingredients
Salad base:
1/2 green cabbage
1 large cucumber
1/4 cup of chives
1 bundle of green onions
Dressing Ingredients:
1 cup basil leaves
1 cup spinach leaves
2-4 cloves garlic
1/4 red onion (or 1 small shallot)
Juice of 2 lemons
1/4 cup olive oil
1/4 cup roasted cashews
1/3 cup of parmesan cheese (or nutritional yeast)
1 tsp salt
2 tbsp rice vinegar
Any extra chives
Directions
Chop up cabbage, cucumbers, chives, and green onions into small pieces and add to a large bowl.
In a blender, add all dressing ingredients and blend until smooth.
Add dressing to the salad base and mix until evenly incorporated.
