Ingredients
1/3 cup extra virgin olive oil (good quality)
1/3 cup maple syrup (cold)
Pinch salt (optional)
4 bananas, over-ripe, sliced and frozen
¼ cup chocolate chips
Directions
In a medium bowl, combine the olive oil and maple syrup and whisk together until mixed.
Place 4 over-ripe bananas, sliced and frozen, into a food processor or blender.
Blend until creamy and smooth, scraping down the sides as needed.
Scoop the banana ice cream into bowls or cups.
Drizzle the olive oil caramel sauce generously over the top and salt.
