Spice up your menu with this easy, fibre loaded, veggie boosting side dish!
Ingredients
4-5 zucchinis, cut into rectangular shapes
3 tbsp EVOO
3 tbsp coconut flour
2 tbsp spices (I used a mixture of garlic salt, paprika, basil, lemon pepper)
Directions
In a large bowl, combine all ingredients and toss with hands.
Pour onto a parchment lined baking sheet in a single layer. Spray with oil and top with additional spices.
Bake at 400F for 40 minutes (broil for the last 2-3)! Enjoy!
